Smoothie Bananas Foster Milkshake (serves 2)

Bananas Foster, in which the fruit is flamed in a rum-soaked caramel, is a hard dessert to improve upon. But we found a way: by blending the caramelized bananas with vanilla ice cream into the ultimate milkshake.

Bananas Foster Milkshake

Serves 2

2 tbsp unsalted butter
3 bananas
1⁄4 cup brown sugar
1⁄3 cup dark rum
1⁄4 cup whole milk
1 pint vanilla ice cream
1⁄4 cup ice
Ground cinnamon, for garnish

Put the butter in medium frying pan over medium-*high heat. Peel and cut 2 of the bananas in half lengthwise. When the butter is melted and starting to sizzle, add the bananas to the pan, cut side down, and cook until they are golden brown, flipping them halfway through, about 3 minutes per side. Reduce the heat to medium and add the brown sugar. When the sugar has melted, add the rum to the pan. If the sauce is very hot, the alcohol will flame on its own. If not, using a match, carefully ignite and continue cooking until flame dies out, for approximately 1 to 2 minutes

Remove from the heat, and transfer to a bowl. Cover and refrigerate until cold.

Peel the remaining banana and put in a blender. Add the cooked banana mixture, milk, ice cream and ice. Cover and blend on high until smooth. Transfer to two glasses and garnish with the cinnamon. Serve immediately.
