Italian Ice Olive Oil Ice Cream Recipe

Hey all, here’s a recipe for olive oil ice cream which is well worth trying if you like ice cream that’s a little different. I have made this ice cream several times for friends and they’re always surprised at how much they enjoy it (although they’re initially not to keen to try it!).

The secret to a good olive oil ice cream is the quality of the oil. Why is this so important? The flavor of the oil has nowhere to hide. In other words, there are no other flavors to mask the taste of a bad tasting olive oil. When you select your oil, it’s important to choose a light, good quality oil that doesn’t have peppery flavor notes. I tried a peppery oil once and it wasn’t good.

Here’s my recipe which I’ve altered slightly from my original recipe here:


  • 3 egg yolks
  • 1 1/2 cup whole milk
  • 1 cup cream
  • 1/2 cup sugar
  • A pinch of salt, fleur de sel is best
  • 1/4 cup extra virgin olive oil

  1. Whisk egg yolks in a small bowl until pale then set aside.
  2. Heat milk, cream, sugar and salt in a medium saucepan on a medium to high heat until simmering then remove from heat.
  3. Slowly pour 1 cup of the milk into the egg yolks all the while whisking at a fast pace.
  4. Whisk the yolks into the saucepan of milk and continue heating on a medium heat until it coats the back of a spoon. This usually takes a few minutes. Do not allow to boil.
  5. Pour the milk through a fine strainer into a bowl and then mix in the olive oil.
  6. Add to an airtight container and freeze for at least 3 hours, preferably overnight.
  7. Add to ice cream machine and churn as per manufacturers instructions.
  8. Add to an airtight container and freeze for at least 2 hours or until you're happy with the hardness.
A light sprinkling of parmesan cheese is a delicious garnish to this ice cream. Sounds not so good I know, but try it! This gives a nice balance of saltiness and sweetness.
I hope you enjoy my olive oil ice cream. If you need a break from chocolate or vanilla, this is well worth a try.
